honey, this is what's for dinner :)

Yummy Brown rice stuffed bell peppers :)
look yummy don't they :) I came up with this recipe as a result of my love for Bell peppers and brown rice.Try it..I hope you like it as much as we did.Don't forget to take pictures when you bake,OK!
2 cups Brown Rice (soak them for 15 mins)
Olive Oil : 1 Table spoon
Onion : 1 medium size
Tomatoes: 2 medium size
Parsley: 1 big bunch washed and chopped
Peas : 1cup
Salt:to taste,Cayenne powder:1 Tsp
Black pepper: 1/2 tsp
Cumin Seeds:1 tsp
Dried Oregano : 1Tablespoon
Tomato Sauce: 4cups or less
Bell Pepper: 4 large and 1 medium sized for chopping.
A few toothpicks.
While your rice are soaking, heat olive oil in a saute pan and add half of the chopped onion,add the cumin seeds stir for a few minutes until the onions get tender, add salt, cayenne pepper,black pepper,1chopped tomato,half bunch of chopped parsley,Peas and stir for a few minutes.Keep the heat at a "high" setting.
Drain the water from the rice and add them to your pan and stir once.
Add water to your pan, almost twice as much as the rice...1 to 2 ratio.but you can always add a smaller amount to start and then add more if you see the rice are not completely tender.
When your rice are almost tender and all the water is evaporated,reduce the heat to a "medium low" and add 1/2 cup water and cover the lid.cook for another 10 minutes,until the rice are completely tender.
Set the rack in your oven at the bottom setting and preheat your oven at 400'F.
Meanwhile, cut the tops of the bell peppers and empty out the seeds.Just like shown in the picture below.(try to remember which "lid" belongs to which bell pepper "bowl") Set them in a pyrex baking dish,I sprayed PAM before putting the bell peppers in for the sake of sanity at dish washing time :)

When your rice is completely tender,add remaining chopped mixture( half onion,a tomato, half bunch of parsley,1 small bell pepper ALL CUT INTO SMALL CUBES) and mix in the rice.Then fill your bell peppers with rice, like this...
Put the lid on them,and secure them with toothpicks. If you have any left over rice... add them at the bottom of your baking dish,add some tomato sauce on that and mix it in the rice.It should look YUM!!!

By this time, your oven should be beeping the preheat beep for about 7-8 mins...Perfect timing to put the dish in your oven and leave it in for about 20 mins or so.Until they come out looking like this:
