Yummy AND Healthy Veggie Patties :)

I wanted try something healthy yet yummy so I tried my luck on these veggie patties... nothing fancy...just whatever vegetables you have in your fridge :)
They turned out to be very very wanna try?
here is how I made them,I didn't measure anything so all the quantities are approximate.You can adjust them according to your taste.
First off I took almost,
1/2 cup corn,
1/2 cup peas,
1 medium size potato
1 medium size sweet potato
2 stems celery
1/2 cup cauliflower florets
1/4 cup chopped cilantro
1/4 cup chopped jalapenos
1/4 cup chopped onions
1/2 cup shredded cabbage
1/4 cup diced carrots.
1/4 cup diced bell pepper
3/4 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper
1/2 tsp cumin seeds (crushed)
2 tablespoon wheat germ or ground oats or flax meal
Coating Station:
1/2 cup corn starch
2 eggs
1 cup Whole wheat bread crumbs

There... you got all your supplies ready!
Put corn and peas in a Pyrex bowl and microwave them on "COOK" setting for about 6 minutes.I like to sprinkle some salt on them to cut down on the sweet taste.
Dice your vegetables nice and small like this...
Once your peas and corn come out of the microwave,it is time for potatoes and sweet potatoes to cook.I think it took 8 minutes for them to be tender.when they come out of the microwave...wait a few minutes and then carefully mash them...they will be VERY hot!
Add everything together in a big glass bowl,add the spices...get in there with your hands.Mix the vegetables...careful not to break them too much.No one likes mushy peas haha!
If the mixture is a little on the wet side...add the wheat germ or flax meal or even ground up some oats and add them to the vegetables to soak up that moisture in the batter.
Let this sit for about 10 can put it in the refrigerator if you like.
Get your grill/skillet ready can also bake these at 375'F fro 10 minutes each side...and also make sure to get your coating station ready... corn flour,egg and bread crumbs.
all the flavors are almost blended and doing their magic in the batter :) mmmm
Start making patties ...and coat them with corn flour first,then a swim in the egg and then final coating of bread crumbs.
Spray some PAM on the grill and grill away :) ah they smell sooooooo good.

ooooh I want to try those for sure ! the store bought ones are so fullll of sodium ! going grocery shopping tonight...going to write down the recipe for grocery list, lol ! maybe veggie burgers for tomorrow night !
