Banana Nut chip bread,chocolate over load cake and a Diva cake :)

Hello friends,
Yup I have been MIA.I apologize I just disappeared.
I have been busy schooling,running around,caking,working out etc etc.I see some calming down in a few days.Things will slow down and I will hopefully get some time to pick up and finish my knitting projects and do a little bit more blogging.
I made this Banana bread day before yesterday and had recipe requests all day long... Anyone who tried it...LOVED IT! I found that recipe online...I wish I could remember where I found it...but just as it said, this really will be the last banana bread recipe I will ever search :) This one is a keeper! delicious,moist,quick and easy.
Here is the recipe.

1 3/4 cup + 2Tbsp All purpose flour.
1 1/2 cups sugar.
1/2 tsp baking powder
1tsp baking soda
3/4tsp salt
1 cup chocolate chips
1/2 - 3/4 cups nuts
3 ripe bananas mashed
2 eggs
1/3 cup buttermilk
1/2 cup oil
1 tsp vanilla.
Mix,pour and bake 40 mins at 350'F
oooh this was soooo good with a mug of coffee...YUM YUM!
Since mid October,I have been making tons of cakes,cupcakes and cookies for friends and mostly because of Waaiz's birthday celebrations with his bazillion friends and classes.

busy...over rated ;)

If you were to ask me when do I get a chance to sit down during my day...I'd say when I am driving. haha!
Always running around,doing something.My poor blog is being neglected just like my skin and hair :( sad,I know! I NEED A VACATION!!! someday...oh well.
Good thing is that Waaiz is doing fantastic in his studies and everything else.So that makes me very happy.
His sports classes are making him strong,healthy and agile. His swimming is improving.His sketches and drawings skills are just amazing.He is learning about Robotics and Science and reading tons of interesting books. Busy kid!
I am managing to eat healthy and workout regularly,regardless of the craziness in my life. yayyy.It is such a good feeling that I am maintaining my healthy lifestyle and workout schedule.Keeping the weight off has been,well... easy!
Do you remember reading this? I don't know if I already shared this link on my blog before...but this makes me smile everytime I read it :)

Story time...

I know,I know! I just disappeared.I have been bad.September was a crazy busy month with lots of learning,running around and everything else.
Yesterday,my wonderful and talented friend Nicole started this funny thing on Facebook.I will let you enjoy it...read on! ( the two alphabets in caps are the initials of the FB friends who contributed to this fun story)

Story Time! Everyone add one sentence to the story. Once upon a time, on a crisp Fall Thursday......
J C.F: there was an orchard of apple trees
HK: and a little boy named Newton sat under an apple tree, wishing it was Friday...
R B:Nebraska shut out Wisconsin.............
R R: Well with Nebraska shutting out Wisconsin at least now I know its a fairy tale.
A big dark dragon flew in ....
TW: ‎...and asked Newton if he wanted a ride somewhere....
NF:"Yes! I would like to go talk to president Obama please.
TW:"so Newton climbed on the dragon's back, took a good firm grasp on the dragon's spikes (y'know because he knew about gravity and wasn't about to become a casualty of what he had already discovered), and off they went to see the president.....
KG:" unfortunately they went to see the president according to a map drawn by his aides...so, instead of seeing him in colorado they ended up in wyoming...lost and surrounded by wild horses...
HK"‎... and then he saw a Wholefoods sign at a distance so he went that way,hoping to find something delicious to eat...
NF:"But was torn between his loyalty to Trader Joes and Whole Foods.
HK:" ‎...so the poor kid used his smart phone to locate a Trade Joes near by,but to his disappointment he didn't get a good signal in the area-after all he was a subscriber to the "world's slowest 3G network"...
NF: ‎"Can you hear me now?" So he decided to go to Nebraska for a steak and corn.
HK:" ‎...before he could take off,he found out that the dragon was out of gas and he had to find a gas station near by."May be I can ask one of these wild horses for directions",he said to himself...
KG:"Unfortunatly, once the horses found out that he was a Cornhuskers fan they ignored him. Leaving the poor guy and his dragon stranded in the middle of nowhere. Lucky for him in the distance he could see a circus caravan traveling his way.
NF :"The caravan was full of Penn State carnies who where heading back to PA for the Nov 12th game. They had small hands and smelled of cabbage."
KG:"Newton and his dragon tried to hop on the one of the caravan wagons. unfortunately, the carnies mistook them for a traveling team from a rival circus and didn't let them on. mostly because of the hideous bright red shirt newton was wearing.
HK:" ‎...and also because of his girly neon green flip flops that were actually his moms
KG:" and his bedazzled jean jacket which was his older sister's
NF:" So Newton put on his headphones and listen to his Harry Chapin album, and cried as he heard the words of 'Cats in the Cradle'.
HK:"‎...then he decided to change the mood and tuned to the soft rock radio station,he cried even more to Adele's Rolling in the deep...
HK:" he turned his radio off and asked his dragon to sing him a lullaby.The kind hearted dragon started singing,"take me out to the ball game...
KG:"which greatly angered newton because he was not a baseball fan. so he sent the dragon away in a fit of anger. which was not his best idea because now he was all alone in an unknown land. newton did not fret because as he started walking he saw a coffee shop in the distance...
LKH:" AND EVERYONE KNOWS, Starbucks can save the day! Newton and his princess lived happily ever after with free Wi-fi.
NF:" As he FB with his friends until his finger bled.

Day dreamer!

... ooh the love of shoes,pretty colorful and gorgeous sandals.A lot of my friends are annoyed,amazed,amused and tickled by my love of shoes.If you ask me,I just can't have enough sandals- more the merrier!
It's an old flame,I've always been into shoes,all kinds of shoes- flats,pumps,peep toes,wedges,stilletos.Any color,shape or height.I love them.They just have to be pretty and comfortable.I remember my mom's collection.WOWZERS,she loved Linda's Italian pumps.And I always loved walking around the house wearing them when I was a little girl :) good times.
Recently Bakers came out with their fall collection.Oh do I have some serious crushes! I thought,I'd share some with you guys.A little window shopping never hurts ;) *drooling is perfectly normal*
Meet the little snow angel "Barcelona".I love the beads on it.pretty!
Next comes a burst of color with Poppy in a gorgeous shade of raspberry pink/purple. I have these in White,oooh they are FANTASTIC!!!
I want them in that dark pink and this blue :) I can't decide which one to get first- err second,since I already have the white ones...
And I have always loved teal and turquoise tones.Check out this beautiful pump
Then comes the elegant and sassy "Powers" I LOWWWHHHH this one :)

Spring Rolls minus the calories if you bake them :) .

mmmmmm... I know you are drooling :)

get your knife and chopping board ready.You are in for a nice arm workout :)
Thinly slice bell peppers,carrots,cabbage,celery and zucchini. Add steamed peas and corn. Just eye ball the quantity ...I don't measure,I add a lot of cabbage and zucchini,you can add any other vegetables you like.I think I'd add alfalfa sprouts next time,mmmm
Add Salt,black pepper and white pepper. about 2 tablespoons of soy sauce and lots of hot sauce ;)

I also LOVE to add a little bit of shredded chicken,mmmm.It makes my spring roll a bit more filling and hearty.You can either cook little pieces of chicken with salt,pepper,hot sauce,white pepper and soy sauce OR you can get some grilled chicken and chop it into tiny pieces and add that to the vegetables.
Toss everything together.I have noticed an amazing flavor if I leave this mixture in the refrigerator overnight.ah! perfection.
Now comes the fun part.Get a pastry brush.Break an egg in a bowl and add 1 tablespoon of water,beat well.
Brush the sides of the spring roll sheet with the egg mixture.
Add about 1 tablespoon of the veggie/chicken mixture on your pastry sheet.
fold the sides on the filling.
start rolling the sheet towards the opposite end.
keep going... brush the edges with the egg mixture so it will seal well.
All rolled up and ready.
more the merrier.
You can fry these guys on a skillet with a few tablespoons of canola oil.They are delicious.
Set these guys on a cookie sheet,spray them well with PAM.Bake them in a preheated oven at 400'F for about 10 minutes at the middle rack.Depending on the size of your oven you might wanna have to broil them for about 6 minutes, it makes them really crispy and crunchy.

Oats,Cinnamon,Carrots and Chocolate truffles.mmmmm

Oh dear, I haven't been blogging lately,missing something! I am so sorry,I missed it.But,I have a million pictures saved on my computer to be posted here.Lots of new recipes.lots of yummies.
So much going on.Plus this hot weather.oh my!I hope this ends soon and we get some much needed rain.It's just so sad to see all the trees and plants just dying :(
On a happy note,I have so many new things going on.W started 4th grade and in a few weeks life gets even busier with swimming,sports,Arts and Science classes.FUN! He and I are going to be very busy.
Ramazan started on August 1st. So I have been fasting,the best part is that I haven't missed a day or my workouts and runs.wooohooo!!! yayyy ME! even in these triple digits hot days I still workout.I love it!!!
And yes lots of new recipes I came up with :) I will be sharing them all here one by one.
So,I was eating my regular breakfast,oatmeal and almonds with skimmed milk ,apples etc etc and for no reason started munching on a lonely chunk of carrot sitting on the countertop. mmmm it was delicious. So I thought why not make Oatmeal/Carrot cookies! Here they are.Plus,I added a surprise in there too :)
Don't they look delicious...
Start with 1 stick of butter at room temperature.Add 1 cup brown sugar.Beat this for about 3 minutes till light and fluffy.
Now to this, add an egg,1/2 tsp of good cinnamon and 1 tsp of good pure vanilla extract.
Mix well,about 2 minutes.
Have about 1 1/2 cup of grated carrots ready.You can squeeze out the moisture from them.
Now as I was putting the left over carrots back in the refrigerator,I saw these chocolate truffles just getting bored.tada! they are going in my cookies.
Take about 7 truffles and chop them. (you can drool at this point and sneak a truffle or two,heehee)
Now take about 1 1/4 cup Whole Wheat flour and about 1 cup of Oats.Add 1 tsp baking powder and a pinch of salt.Stir to combine.
Add Oats/flour mixture,chocolate and about 1/2 cup chopped nuts(almonds or walnuts) to the butter/sugar mixture.Mix well.
Add grated carrots.Mix with a spatula.
Gorgeous cookie dough!
Refrigerate for about 30 minutes.Meanwhile clean up and take care of the dishes.After that preheat your oven to 375'F.Scoop out cookies on a parchment lined cookie sheet about 1" apart.Flatten the cookies a bit.
Bake for about 10- 12 minutes,depending on how big the cookies were.And enjoy with a nice big mug o' black coffee.YUM! The perfect combination of this slight crunch of carrots,chewy oats and gooey chocolate truffle...mmmm Won't be able to stop at one or two of these :)

If you wish to make these a little low fat and low calorie,Add Smart balance instead of butter (or 1/2 cup applesauce and 1/2 cup smart balance) cut the amount of sugar or use Stevia and use 1/4 cup of dark chocolate chunks.
