mmmmm CHOCOLATE!!! Healthy and Good for you.

Many of my friends know about my love for exercisetv and their fabulous trainers. You guys should totally check out exercisetv's quickie chick,Laurel House. She makes fabulous bites with benefits dishes, that are good for you and amazingly YUMMY!!!
She posted a recipe for yummy chocolate cupcakes that are better and lighter. And mentioned something about them being addictive- got my attention right there.
Here is her original recipe. She uses a yummy peanut butter frosting for these cupcakes.I haven't tried the frosting yet.Two reasons,(a) I don't let anything come between me and my chocolate treat, not even frosting. (b) I am not a big frosting fan.
Here is my take on these cuppies( I made a cake instead of cupcakes,so I can cut it into slices and freeze them for rewards and treats for reaching goals and working out regularly).
You need,
1 3/4 cup All Purpose flour (I used Whole Wheat Flour)
1/2 cup Whey Low( I didn't have any Whey Low on hand so I used brown sugar)
1/2 cup brown sugar
3/4 cup cocoa powder
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1 1/4 cup skimmed milk (I used Silk,Almond milk,YUM!!!)
1 cup Fat free Yogurt
2 eggs
1/4 cup canola oil
1 tsp Vanilla extract
1 tsp Almond extract
1 cup hot coffee
Pre heat oven to 325' F. prepare your cupcake pan with cupcake liners,or just use a loaf or cake pan and spray with PAM.
Mix eggs, yogurt(sour cream) and Vanilla in a big bowl, beat well.

Mix skimmed milk, oil and cocoa powder together.
add hot brewed coffee to it.mmm looks like hot cocoa.
add that to your egg and yogurt mixture.Add sugar and beat well.
now dump the flour, baking soda, baking powder and salt.
Mix and pour in your pan or cupcake liners.Cupcakes should be ready in 20 minutes at 325'F.Loaf pan took the same time.
I couldn't resist...I had to take a picture of it while it was baking.oh the wait!
waiting...for it to cool down a little bit.
ahhhhhh FINALLY!!! I can have my treat with my mug'o hot black coffee.YUM! dont forget the strawberries.
Is it bad,if I tell you I ate this for dinner and breakfast the next morning :D it is THAT good.I made this for myself as a treat for reaching my goal.I set a goal related to my running and when I reach it,it is TREAT time! What keeps you motivated? tell me :)
Try this recipe...kids will love it.No one will taste the "healthy" taste in them,I promise!

Red is my color...

So, this Valentine's Day...Maani got me this gorgeous shirt...
It says,
What a girl wants.. friends, fun, handbags, shoes, fashion, red lipstick
awwww... Yes I know,he is a keeper ;)
This got me thinking,I have pretty much all of the above but a red lipcolor.Who knew God took requests for make up prayers too :) Look what I got in the mail a few days ago :) and it was FREEEEEEE from Bzzagent.
Fabulous lip colors from Maybelline. That's their newest line,Super Stay 24 hr colour.See it here
I now am a proud owner of a red lipstick :) I just have to find a perfect occasion to wear red lips.I have a feeling I am going to have to convince myself really really hard. Many reasons I don't wear red lipstick...
a)I've never liked red lipstick on me,
b)I am no movie star
c)I have no idea what outfit goes with red lipstick- I have a cute red purse and really really cute red sandals, and a nice red blouse...but then I'd be a red riding hood...see you get the idea,I have NO IDEA what goes with red lipstick :)
d)even if I dress fancy and try red lipstick...I won't have anywhere special to go.
e)I tend to eat my lip gloss, and red lip colors looks ridiculous when it is half worn and half eaten, not to mention it gets on your teeth.
f) I don't wear lipstick, lipgloss is my friend :)
I can go on and on...but these awesome lipsticks which stay on for hours...are making me want to try it-even if it is only for once ;) Be a brave girl now!
I tried all four shades that I got for free,LOVE THEM!!!
I got Timeless Rose,Keep It Red,Forever Chestnut and Wear On Wildberry.
I cant pick a favorite...I liked them all. They stayed on for an entire day...even after lunch, snacks and dinner, and it didn't even chap or dry my lips...Good job Maybelline!

...put a ring on it! umm lady finger people :)

So I found these gorgeous lady fingers at the vegetable market, last week.I had to bring them home.I will share with you,a yummy recipe that is very special to me.I have a very fond memory of a sweet day, when my dad made this dish for me and my brother. And the lady fingers ,tomatoes and peppers were picked fresh from my mom's vegetable garden.I have never seen my dad cook in the kitchen and that was one time he made a dish for us...and he did a great job! it was so delicious...I still haven't forgotten the taste of it.YUM!
First, you wash the lady fingers and spread them in a tray or on a kitchen towel. When all the water is dry cut them in 1" pieces, here I cut them at an angle.
Now, take a medium size onion, slice it thinly.Pour some olive oil in a pan with Medium heat On and add the onions.
Add, 1tsp of cumin seeds, 1 tsp of mustard seeds,1 tsp of fennel seeds,1tsp nigella seeds(kalonji) and 1/4 tsp of mustard powder.Stir.add,1tsp of cayenne powder,1 tsp of coriander powder and 1 tsp of chopped garlic and/or ginger.Stir again making sure nothing burns or sticks to the bottom of the pan.
Now, add 2 medium size potatoes and slice them thinly and add them to your pan.I added chopped Jalapenos as well.Add 3 medium sized roma tomatoes(chopped) in there and cook until the potatoes are tender.
In another wok or frying pan on high heat, add 1 tablespoon of olive oil and add the lady fingers.Keep the flame /heat setting on high,so your lady fingers dont get a chance to be gooey.
Saute' the lady finger (Okra) and just when it starts getting tender and changes its color to a hint of shiny brown, add some salt, about 1/4 tsp of black pepper and 1 1/2 tsp of white vinegar. This is the key to make a non gooey okra,is to add vinegar and frying it at high heat.
Now, add that okra to your potato ,onion and tomato curry
Carefully toss the two together.Cover and let the flavors blend in for a few minutes.
Serve it with warm naan or pita bread.See how easy and pretty :)

Donna's birthday cake

EDIT****
Here is my beautiful friend Donna :)
This will remind you of French poodle couture cakes ;) pink, black and white, with a touch of major bling.Overall girly girly!
Oh how I love making these flowers. They are time consuming...but very worth the effort.
First I rolled a ball of black gum paste and flattened it a little bit. Then comes the time consuming part.
You take the plastic stamens and cut them about 1/4" length,
take them and insert them along the sides of that gumpaste ball, one by one.OK! you do that...and I will see you tomorrow ;)

Here are the gumpaste flowers resting in their formers.
once the flowers were firm I attached the flower centers to them.already looking pretty!
oh beautiful.
Here is my vision of that girly cake.
what do you think :)
oh and I love using the luster dust on the petals to give them a nice hint of shimmer.
love the silver sugar balls with these black scrolls
I love everything about this cake...the pink, the shimmer, the black embroidery, the pink and black silk ribbons and ofcourse the rhinestone trim.
I know you wanna see the cake :) here, people! I present you...Donna's birthday cake.
Happy Birthday my Sweet friend Donna! I love you.
