I like these buns and I can not lie :p

This morning I was craving something sweet,yummy,delicious and sweet :) haha.Plus my little munchkin wanted to eat Cinnamon rolls...I thought about getting the refrigerated rolls and baking them for him,I even stopped at the grocery store when I went running this morning.I saw Pillsbury reduced fat cinnamon rolls...I just couldn't make myself buy it...I wanted to go errr run home and try my luck at making some good Cinnamon rolls.I wanted to see if I can make them low fat,low calorie and still delicious.So I did :)
I didn't take any pictures of the beginning stage of the dough making, honestly cause I was skeptical,haha... I didn't want to waste time on taking pictures and then be dis hearted if these didn't turn out right.Little did I know :)
So, I took... about 8oz of fat free half n half
8 oz of skimmed milk.
2 tablespoons of honey
put it in a measuring cup and microwave for 2:30mins... it should be bubbling. take it out of the microwave,let it sit.
Get your Kitchen Aid mixer ready and add
2 1/2 cups of Whole Wheat Flour.
1 tsp of yeast and stir to combine.
check if the milk and honey is warm.Add that to your flour mixture. Add 2 tablespoons of olive oil and knead the dough for about 5 minutes.Add a tiny bit more flour if the dough is too sticky.
Once you have a nice smooth ball of dough.Grease it with a few drops of olive oil,cover it and let it rest in a warm place.This was the time I was praying for them to rise :) hoping it all works its magic and I wont have to give in for some store bought refrigerated rolls :/
An hour later, I went to check in on my beloved dough...VIOLA!!! it was doing its thang! * happy dance*
That's when I thought I should take a picture...but I was rushing to get this dough thing going so I wont have to wait any longer to eat yummy rolls :)
Then, you take... about 1/2 cup of WW flour, add about 1/2 tsp of baking soda,
1 tsp of baking powder and 1/2 tsp of salt. Add that to your dough and knead it again.It may need a splash of milk.Keep kneading this for a few more minutes,about 5 ,I'd say... It will be a nice smooth dough.very soft.
Take it out on the counter top or your rolling surface,dust the surface with flour, start rolling your dough.( I was still doubtful this will turn out any good,shame on me)
Roll it in a rectangle shape about 1/2" thick.
Then drizzle some olive oil on the rolled out dough.You can use smart balance spread too.Then drizzle some honey and spread it all over the surface.mmmm
Sprinkle some cinnamon powder on this sticky surface and start rolling the log towards you.Roll it tightly.(Me,still doubtful,tch tch)
Cut this log into about an inch thick sections with a serrated knife and set them on a glass baking dish,remember to spray the dish's inside with PAM so your rolls wont stick to it.
Once you've set these in the baking dish.Cover the dish with seran wrap or a towel and let it sit for another 30 minutes or even an hour in a warm place. ( PRAY) haha.
One look before they are left to rise...
they look "normal" to me :) but I am still doubtful...(shaking my head)
An hour later...I went back to look at them...oooh they were big and fluffy...thats when I KNEW these are going to be a success.

Preheat your oven to 400'F and set the rack in the middle.Once your oven preheats, wait about 10 minutes and then send these buns to bakeville ;) Set the timer for 16 minutes.
8 minutes later....mmmm I couldn't resist peeking in the oven :)

Once the timer beeped...I took the dish out of the oven...and 2 seconds later, one was missing :)
't wasn't me :)
I still was doubtful... so I took a closer look at the "crumb" mmmm fluffy,moist and soft! (Now I am proud and happy)

I didn't tell you :) but I sneaked in some raisins when I was sprinkling the cinnamon ;) they were delicious.Between me and my munchkin,3 cinnamon rolls were gone within 2 minutes,Yes they are THAT light and yummy.No frosting needed, ok maybe a drizzle of honey ,that's it!

Now I sit down with my moist and yummy friends and my black coffee for a movie watching marathon as the storm rolls in our area.I know I am comfy and cozy with these delicious,cinnamony goodies! try them!!!
I ended up eating 3 of these, o.O I will be running these off soon,don't worry ;)
