Take a dip this weekend :)

like what you see? mmmm it indeed is very yummy.My first time trying my hand at Cannellini
been dip.I found these beans at Whole foods.This dip is addicting! I can see how movie nights can be extra fun from now on :)
Here is what you need for this simple yet delicious dip.Firts off you preheat the oven at 350'F.
Cannellini beans- boiled and drained (or you can use,Northern beans or Navy beans) about 3 cups.I boiled them in a big pot filled with water and added 1tsp of salt to that water.
Salt n pepper
Olive oil 1tablespoon
Jalapenos- YUM! you can skip these if you dont like it spicy
Garlic - 6 cloves.
fresh or dried parsley - 1 1/2 Tablespoon
Red onion- 1/4 medium sized
Fat free yogurt - 1/4 cup
Lemon Juice - 2 tablespoons
Roasted Red pepper OR Sundried tomatoes - 2- 3 tablespoons.
Bread Crumbs - 1/2 cup
Parmesan Cheese - 1/4 cup.
This is what Cannellini beans look like after you boil them,they are White Kidney beans.
So you take the beans,throw them in your food processor and add roasted red pepper /sun dried tomatoes,lemon juice,olive oil,salt and pepper,parsley and yogurt and grind it into a smooth paste.Take it out of the food processor.It should be looking like this.
Then add onions,jalapenos and garlic to your food processor and grind.
Mix these two mixtures together with a spatula.
Spray an oven safe pie or casserol dish spray some non stick cooking spray.Pour the thick bean mixture on the dish and spread evenly.
Sprinkly some Parmesan on it.Here I didn't cover the entire dip with Parm because I am not big on cheese.This little portion was for my munchkin.Sprinkle the bread crumbs on the entire surface.And let it bake in the oven for 20 minutes.
mmmmm nice and crunchy golden crust!
Enjoy it with carrot chips and pita chips,mmmm.The creaminess of the warm dip with the crunch of carrots and roasted breadcrumbs,ah!!! just a perfect combination.
I made some fresh hot salsa to go with this..and I do not regret it ;)
