Cookies! I'm addicted and I just can't get enough :) Father's Day T's and more shoes.

mmmmm delicious,good for me,nutritious treat cookies! I love making a guilt free treat with a nice chocolate touch in it.I wanted to make some chocolate chunk cookies for myself that I won't regret eating. So I came up with this recipe.
1 Cup Whole Wheat flour or all purpose flour
2 Cup rolled oats
1/4 tsp salt
1 tsp
baking powder
1/2 tsp
baking soda
1/2 tsp cinnamon
1 tbsp flax meal/flax seeds
3/4
cup brown sugar (I used about 1/2 cup of tarbinado sugar)
1
big banana mashed
2 eggs
1 tsp vanilla
3 tbsp oil
1/4 cup walnuts + 1/2 cup choc chunks or 3/4 cup choc chunks
and some youtube music to keep you entertained :D Here is what I was watching while making these delicious cookies.
While you are dancing to the catchy tune,grab a nice big bowl and throw in the WW flour,brown sugar,chocolate chunks,oats,baking powder,baking soda,flax,pinch o' salt and cinnamon.Looking pretty :)
Mash the well ripe banana,add oil,vanilla extract and eggs.Beat well.
Add walnuts to the dry ingredients,mix well.
Add the egg and banana mixture to the dry ingredients and combine everything.
Preheat your oven to 350'F and refrigerate you cookie dough for about 15 minutes.Or keep the bowl in the freezer for a little while.
After your oven has been preheating for a good 10 minutes,take the chilled dough out and line a cookie sheet with parchment paper.Start making dough balls and flatten them a little bit and set them about 1 1/2" apart on the cookie sheet.
Bake these for about 10-11 minutes.gosh they smell AMAZING!!!
tada!! you got yourself a delicious,nutritious treat.Now go for a nice long run :)

Then Waaiz wanted to make Red Velvet cookies.I found a recipe somewhere a looooooonngg time ago...I made some changes to it,to make it easy enough for Waaiz.They were delicious and easy.
First I took a stick of butter (1/4 cup) and 1 cup of sugar and threw them in the KA.I let the machine run for about 3 minutes,till the mixture was light and fluffy.

Meanwhile, I took about 1/4 tsp - 1/2 tsp of white vinegar in a cup and added 1/4 cup whole milk and let it sit a few minutes to make buttermilk.Or,you can just get 2tsps of buttermilk.
Then I took a nice big bowl and added about 1 1/3 cup of cake flour,about 3 tablespoons of cocoa powder,1/4 tsp baking soda,a pinch of salt,1 tsp baking powder.
Then add 2 eggs to the butter and sugar.
Beat for a few minutes.Then carefully add 2 tablespoons of Red food color(I had Wilton gel color,so I used that).See how pretty.
Now take 2 tsp of Apple Cider Vinegar,
2 tsps of buttermilk and 1 tsp of Vanilla extract and add that to the red mixture.Look what happens to your smooth and creamy batter- it curdles... that's because of the acid in the vinegar,no worries!
Now take your dry ingredients,stir them to mix and slowly add them to the wet ingredients.
Don't over mix.
Chill the dough in the refrigerator.
Scoop out the dough onto the cookie sheet and bake in a 350'F oven for 11 minutes.
Viola! You have gorgeous red velvet cookies that are delicious and homemade :)
and they will start disappearing sooner than you expect :)
Hope you like these recipes.Try them and let me know if you add your twist to these!You can make whoopie pies with these RV cakies (they have a chewy soft texture,hence we call them cakies :D) Sandwich cream cheese frosting between two cakies and YUM!
How was your weekend? I had a pretty relaxing weekend.I went to Bakers for some shoe shopping,exchanged some sandals for my correct size.So that was fun ;)
I exchanged my gorgeous Poppy for a size 6 that fits me comfortably now
and I got Makala.

Then I also made these T shirts for my boys.We are a Jeep family so I decided to make something Jeep for them.
Waaiz and Maani LOVED their T's...and Maani couldn't believe I drew those pictures free hand with fabric paint :) heehee,yup I know,I am pretty artistic ;)

We had a nice brunch this weekend.Stuffed french toasts for me and pancakes for the boys.And these pancakes were low calorie too! SCORE.

This was a perfect way to celebrate Father's Day :D heehee...you know what they say,the way to a man's heart is through his stomach.lol I love to take care of my boys.
