Day dreamer!

... ooh the love of shoes,pretty colorful and gorgeous sandals.A lot of my friends are annoyed,amazed,amused and tickled by my love of shoes.If you ask me,I just can't have enough sandals- more the merrier!
It's an old flame,I've always been into shoes,all kinds of shoes- flats,pumps,peep toes,wedges,stilletos.Any color,shape or height.I love them.They just have to be pretty and comfortable.I remember my mom's collection.WOWZERS,she loved Linda's Italian pumps.And I always loved walking around the house wearing them when I was a little girl :) good times.
Recently Bakers came out with their fall collection.Oh do I have some serious crushes! I thought,I'd share some with you guys.A little window shopping never hurts ;) *drooling is perfectly normal*
Meet the little snow angel "Barcelona".I love the beads on it.pretty!
Next comes a burst of color with Poppy in a gorgeous shade of raspberry pink/purple. I have these in White,oooh they are FANTASTIC!!!
I want them in that dark pink and this blue :) I can't decide which one to get first- err second,since I already have the white ones...
And I have always loved teal and turquoise tones.Check out this beautiful pump
Then comes the elegant and sassy "Powers" I LOWWWHHHH this one :)

sigh! I KNOW :D gawgeous!
The drooling doesn't end here ( I know I am hopeless) haha.

Spring Rolls minus the calories if you bake them :) .

mmmmmm... I know you are drooling :)

get your knife and chopping board ready.You are in for a nice arm workout :)
Thinly slice bell peppers,carrots,cabbage,celery and zucchini. Add steamed peas and corn. Just eye ball the quantity ...I don't measure,I add a lot of cabbage and zucchini,you can add any other vegetables you like.I think I'd add alfalfa sprouts next time,mmmm
Add Salt,black pepper and white pepper. about 2 tablespoons of soy sauce and lots of hot sauce ;)

I also LOVE to add a little bit of shredded chicken,mmmm.It makes my spring roll a bit more filling and hearty.You can either cook little pieces of chicken with salt,pepper,hot sauce,white pepper and soy sauce OR you can get some grilled chicken and chop it into tiny pieces and add that to the vegetables.
Toss everything together.I have noticed an amazing flavor if I leave this mixture in the refrigerator overnight.ah! perfection.
Now comes the fun part.Get a pastry brush.Break an egg in a bowl and add 1 tablespoon of water,beat well.
Brush the sides of the spring roll sheet with the egg mixture.
Add about 1 tablespoon of the veggie/chicken mixture on your pastry sheet.
fold the sides on the filling.
start rolling the sheet towards the opposite end.
keep going... brush the edges with the egg mixture so it will seal well.
All rolled up and ready.
more the merrier.
You can fry these guys on a skillet with a few tablespoons of canola oil.They are delicious.
DIRTY BIT:
Set these guys on a cookie sheet,spray them well with PAM.Bake them in a preheated oven at 400'F for about 10 minutes at the middle rack.Depending on the size of your oven you might wanna have to broil them for about 6 minutes, it makes them really crispy and crunchy.

Oats,Cinnamon,Carrots and Chocolate truffles.mmmmm

Oh dear, I haven't been blogging lately,missing something! I am so sorry,I missed it.But,I have a million pictures saved on my computer to be posted here.Lots of new recipes.lots of yummies.
So much going on.Plus this hot weather.oh my!I hope this ends soon and we get some much needed rain.It's just so sad to see all the trees and plants just dying :(
On a happy note,I have so many new things going on.W started 4th grade and in a few weeks life gets even busier with swimming,sports,Arts and Science classes.FUN! He and I are going to be very busy.
Ramazan started on August 1st. So I have been fasting,the best part is that I haven't missed a day or my workouts and runs.wooohooo!!! yayyy ME! even in these triple digits hot days I still workout.I love it!!!
And yes lots of new recipes I came up with :) I will be sharing them all here one by one.
So,I was eating my regular breakfast,oatmeal and almonds with skimmed milk ,apples etc etc and for no reason started munching on a lonely chunk of carrot sitting on the countertop. mmmm it was delicious. So I thought why not make Oatmeal/Carrot cookies! Here they are.Plus,I added a surprise in there too :)
Don't they look delicious...
Start with 1 stick of butter at room temperature.Add 1 cup brown sugar.Beat this for about 3 minutes till light and fluffy.
Now to this, add an egg,1/2 tsp of good cinnamon and 1 tsp of good pure vanilla extract.
Mix well,about 2 minutes.
Have about 1 1/2 cup of grated carrots ready.You can squeeze out the moisture from them.
Now as I was putting the left over carrots back in the refrigerator,I saw these chocolate truffles just getting bored.tada! they are going in my cookies.
Take about 7 truffles and chop them. (you can drool at this point and sneak a truffle or two,heehee)
Now take about 1 1/4 cup Whole Wheat flour and about 1 cup of Oats.Add 1 tsp baking powder and a pinch of salt.Stir to combine.
Add Oats/flour mixture,chocolate and about 1/2 cup chopped nuts(almonds or walnuts) to the butter/sugar mixture.Mix well.
Add grated carrots.Mix with a spatula.
Gorgeous cookie dough!
Refrigerate for about 30 minutes.Meanwhile clean up and take care of the dishes.After that preheat your oven to 375'F.Scoop out cookies on a parchment lined cookie sheet about 1" apart.Flatten the cookies a bit.
Bake for about 10- 12 minutes,depending on how big the cookies were.And enjoy with a nice big mug o' black coffee.YUM! The perfect combination of this slight crunch of carrots,chewy oats and gooey chocolate truffle...mmmm Won't be able to stop at one or two of these :)

Dirty Bit:
If you wish to make these a little low fat and low calorie,Add Smart balance instead of butter (or 1/2 cup applesauce and 1/2 cup smart balance) cut the amount of sugar or use Stevia and use 1/4 cup of dark chocolate chunks.
